Determination of Overrun in Icecream
Requirements (Instruments, Chemicals & Other) :
- Beaker
- Graduated cylinders (200 ml)
- Spatula
- Water Bath
- Funnel
Procedure :
- Take a 100 ml frozen ice cream cup.
- Empty the frozen ice cream to a 200 ml beaker using spatula.
- Set the temperature of water bath to 49℃.
- Place the beaker in water bath and let it stand till all the ice cream melts.
- Take a 250 ml measuring cylinder. Place a funnel on it and transfer the melted ice- cream into it.
- Add 10 ml water into the beaker. Shake it thoroughly and transfer rinsing water to the measuring cylinder.
- Again add 10 ml water to the beaker, shake it thoroughly and transfer the rinsing water to the measuring cylinder.
- Record the final volume (V1) in the measuring cylinder.
- Calculations:
Volume of melted ice-cream (ml)= V1-10-10
Volume of frozen ice-cream (ml)= 200
