Determination of Overrun in Icecream

Requirements (Instruments, Chemicals & Other) :

  1. Beaker
  2. Graduated cylinders (200 ml)
  3. Spatula
  4. Water Bath
  5. Funnel

Procedure :

  1. Take a 100 ml frozen ice cream cup.
  2. Empty the frozen ice cream to a 200 ml beaker using spatula.
  3. Set the temperature of water bath to 49℃.
  4. Place the beaker in water bath and let it stand till all the ice cream melts.
  5. Take a 250 ml measuring cylinder. Place a funnel on it and transfer the melted ice- cream into it.
  6. Add 10 ml water into the beaker. Shake it thoroughly and transfer rinsing water to the measuring cylinder.
  7. Again add 10 ml water to the beaker, shake it thoroughly and transfer the rinsing water to the measuring cylinder.
  8. Record the final volume (V1) in the measuring cylinder.
  9. Calculations:
    Volume of melted ice-cream (ml)= V1-10-10
    Volume of frozen ice-cream (ml)= 200
