Platform Tests of milk

Platform tests or milk reception tests are the commonly used names for the tests carried out by the persons responsible for raw milk collection and/or reception. The tests in question are rapid quality control tests—organoleptic tests being of crucial importance—whereby milks of inferior or questionable quality can be screened out before the milk leaves its original container and is mixed with bulk milk during collection and/or reception. This is of paramount importance from the processing and product quality perspective, as even a small quantity of poor-quality milk can adversely affect the entire batch with which it is mixed. Such contamination may lead to undesirable changes in flavour, aroma, texture, heat stability, and keeping quality of dairy products, resulting in significant economic losses and reduced consumer acceptability.

Clot-on-boiling (COB) test is a quick and simple method used to assess the suitability of milk for heat processing. It helps identify highly acidic milk (pH < 5.8) as well as abnormal milk such as colostrum milk and mastitic milk. If milk shows clotting upon boiling, it indicates the presence of excessive acidity, high microbial activity, or abnormal protein composition. Such milk possesses poor heat stability and is likely to coagulate during pasteurization, sterilization, or other thermal processing operations. Therefore, milk that fails the COB test is considered unsuitable for processing and must be rejected to prevent quality defects in the final product.

Methylene Blue Reduction Test (MBRT) is widely used as a rapid indicator of the bacteriological quality of milk. The test provides an estimate of the microbial load present in milk based on the time required for methylene blue dye to lose its colour. Since microorganisms utilize oxygen and produce reducing substances during their metabolic activities, milk containing higher numbers of bacteria decolourizes the dye more rapidly than milk with lower microbial counts. Consequently, the reduction time serves as an indirect measure of the hygienic quality of milk and the sanitary conditions maintained during milking, handling, transportation, and storage. Due to its simplicity, low cost, and ease of interpretation, MBRT has been extensively employed as a routine screening test in dairy plants and milk collection centres for preliminary quality evaluation.
